Another Thing That Look’s Like Vomit! (Vegan MoFo Day 16)

I suck at keeping up with Vegan Mofo. I am a MoFo failure. Shoot me in the face.

I det out with good intentions! I thought this would help me blog more. I guess not. Balls.

Forgive me, MoFo gods!! FORGIVE MEEEE!!

This lovely dish was something I made last week. It was Spicy Chorizo Mexican Casserole I believe? I don’t quite remember the name but it came from 500 Vegan Recipes!A salsa bread base, corn, peas, more salsa, and chorizo! Simple and definately a keeper.

Tempeh Shepherds Pie! The shepherds would be proud. Tempeh, corn, peas, onions, and a kick-ass gravy topped with potatoes that made me happy in my pants. It was excellent.

As you can tell, I have had a obsession with casserole-esque dishes. I love being able to throw a bunch of stuff in a dish, baking it, and BAM!, whole meal done. I will be making a few more this week and I very much plan on sharing them. Hopefully.

    I LOOOVVVVEEEE Shepherds Pie! It’s right up there with pot pie! I’m not a huge fan of tempeh, but I keep trying. Maybe this is the way to go… I’ll have to give it a shot. Thanks for the inspiration!

      Give it a shot! Tempeh can take a lot of getting used to. I honestly don’t know the brand I use (never bothered looking since it is the same kind I ALWAYS use) but it was a wild rice flavor. There are a few others by the same company such as garden veggie. All of them have an excellent flavor and texture. What really helped the tempeh in this dish was that it was cut into smaller bite-size chunks and boiled in a Bragg’s and water mix. Definitely helped!!
